Perfect Pumpkin Muffins

1 3/4 cups flour
1 1/2 teaspoons pumpkin pie spice
1/3 teaspoon ground nutmeg
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup vegetable oil
2 large eggs
1 cup granulated sugar
1 cup pumpkin puree (partial to Libby’s)
1/3 cup apple cider

Preheat oven to 350°F. Line a muffin tin.

Combine all ingredients until smooth.

Scoop batter into muffin tins.

Bake 15 minutes for mini muffins, 22–25 for regular muffins.
